Monday Post

Due to being under the weather last week and running out of most of our staples, I was unable to do or even follow a meal plan, and this week will feel the after-effects. I’ll mostly be throwing some things together, and will update if any turn out. Meanwhile, if you have any questions on a previous meal featured in the meal plan that I haven’t addressed or updated on the results, please leave a comment, and I’ll be happy to post a follow-up.

Also, Iron Cupcake’s deadline is fast approaching, and I have less than 4 days to submit my entry. Hopefully, I’ll be able to get it done in time, and if I do, I’ll be posting here once again, begging for your votes 😀

I wanted to share with you a great money-saving deal that I received today through Thrifty Florida Mama. I always feel guilty about spending money on meat and seafood, since E can’t eat such items, and good-quality product is expensive, even when on sale. Well, I don’t have to worry for a little while! Thanks to Geico and Omaha Steaks, I was personally able to get 18 4 0z. burger patties, a 6 piece cutlery set and a cutting board for only $3.98, including shipping. 12 of these burgers are normally $32.99, and shipping and handling is $13.99, so this was definitely a steal!

Here’s how I did it:

  • Go to Geico Privileges, and register. You do not have to be a Geico customer, but you do have to be over the age of 18 and a U.S. resident. Within a couple of hours, you’ll receive a gift certificate code for $25, good any purchase.
  • Head to Wow Coupons, and look for the 6 free burgers, cutting board and cutlery deal (it was the first listed when I last checked)
  • Once you head over to Omaha Steaks, add the item(s) of your choice to your cart. As long as it’s over $14.99, it’ll work. I chose to get 12 4 oz. burgers, which are currently on sale for $14.99.
  • Head over to the checkout; it’ll have added your gifts, and the shipping and handling fees. Enter in your certificate code (no pin required!) that you received in your inbox, and your total will be updated, as mine was, to reflect the changes.

I’ll be receiving my burgers by October 29th – even ignoring the free gift and cost of s+h, the meat ends up costing me about $0.88/lb, which is amazing!

Omaha Steaks now takes Paypal if you don’t have or want to use a credit card, and this deal is good through October 31st.

Monday Meal Plan

Last week, the meal plan didn’t go quite as well as I’d planned. Don’t get me wrong, it worked out better than I thought it would, but some things didn’t make the final cut!

  • Monday’s breakfast risotto came out great; I did make some adjustments, but around here, that’s business as usual! I halved the butter, subbed a pumpkin pie spice blend for the individual spices, subbed brown sugar Splenda for the regular brown sugar and for the liquid, I used 1 part apple juice to 3 parts fat free milk. However, I made it in a 6 qt. crockpot, which meant I ended up having to double the recipe so that it would cook properly, and it made way too much. I put some of it in the freezer until I could figure out what to do with it all, and the hardboiled eggs didn’t happen, much to E’s chagrin.
  • Tuesday went well and the enchiladas were delicious, and very filling! I added in some canned sliced black olives, fresh spinach and cilantro in before baking, so ixnay on the salad, and we were in a rush, so I didn’t make the beans either.
  • Wednesday went off perfectly, we ate everything, and it was delicious! I made very few substitutions, because I used both fat-free milk and cream cheese. Next time I make the quiche, I’ll use frozen spinach instead of the fresh – it’s a substitution that can easily save 10 minutes of the prep time. Also, I would used whipped cream cheese for the peppers for easier spreading, and I will dry the peppers after slicing so that the cream cheese will adhere a little better.
  • Thursday went off well, too – I was a little dumb and scheduled 2 crockpot dishes in one day, and ended up making the potatoes on the stove top. Note to self: get a 4 qt. crockpot! The lasagna was great, and I didn’t make any changes – next time I make it, though, I’ll probably crack the lid for the last couple of hours, as there was a ton of liquid at the bottom of the crock. Also, I don’t think I’d make the potatoes on the stove top again, but I think they’d be much improved made in the crockpot or roasted in the oven.
  • Friday was a good day – more on that later this week!
  • Saturday, E came home, and we went out for dinner with Travis, so I was off duty!
  • Sunday’s meal didn’t happen, either – E made us some modified Reubens (him no meat, me no swiss) instead, and boy, was it good!

Now for this week’s meal plan!

Monday –Broccoli and 3 Cheese Soup, Irish Soda Bread, steamed baby carrots

Tuesday – Brie en Croute, Cheese Fondue with sourdough bread and baby carrots

Wednesday – probably the Crustless Quiche again, but we may just scratch that and eat en route to the concert

Thursday – French Onion Soup, casserole of some sort

Friday, Saturday – away for a friend’s wedding

Sunday – Picnic at Home: Brie en Croute, deviled eggs, cheese plate, olives and pickles(?), pasta salad of some sort (anyone have a simple recipe?)

Meal Plan for Sept. 29th – Oct. 5th

I usually try to do a meal plan, if for nothing more than to make grocery shopping and prep time go a little faster. It usually doesn’t always work out, but hey, practice makes perfect!

Monday – Breakfast for Dinner! Breakfast Risotto, hardboiled eggs with Bacon Salt & pepper

Tuesday – Spicy Cheese Enchiladas, spinach salad and baked beans

Wednesday – Crustless Spinach Quiche, Broiled Stuffed Pepper Wedges, honey wheat rolls

Thursday – No Noodle Vegetable Lasagna, Tomato Curried Potatoes

Friday and Saturday – E’s gone, so just leftovers

Sunday – Broccoli and 3 Cheese Soup, Irish Soda Bread
